Winter Melon

Despite the name, this is actually an Asian squash with delicate white flesh that become translucent when cooked.  It has a mild, unique taste, something like a cross between a cucumber and a turnip.

Winter Melon is frequently used in  simple soup with either a chicken or shrimp based broth.  It may also be stir-fried in the manner of a summer squash.  Add last, so that it does not over cook.

Winter Melon Soup - Master Recipe

1 lb winter melon - peeled and cut into cubes
water to cover
4 cups chicken broth
1/2 cup thinly sliced or diced ham
2-3 slices fresh ginger
salt and pepper to taste
sliced scallions (green only) for garnish
 
 
Simmer winter melon in water for 20 minutes or until tender.  Add chicken broth, ham, ginger and seasonings.  Cook about 20 minutes.  Serve hot garnished with green onion.
 
Variations
 
Add one or more of the below with the broth and ginger:
  • reconstituted Chinese mushrooms
  • shrimp
  • scallops (shred when cooked)
  • bamboo shoots
  • shredded carrots
  • white part of scallions (greens used for garnish)
 
 
 
 

Asian Style Squash Recipes

Silver Bell Squash
Surin Farms grows many different Asian style squash.  They are typically firm, richly colored, and much more flavorful than the usual North American varieties.
 
They can be served baked, roasted or whipped.  But for an interesting change, try them in a Thai style curry or stir fry. 
 
Such succulent flesh does not always need to be hidden by sugar or marshmallows!

This Sweet Dumpling style squash is easy to serve baked.  Just cut in half, add butter and salt, and bake in a medium oven until fork tender.  You can add brown sugar if you like, but this little darling is sweet enough for most on its own.
