Sweet Corn

The biggest secret to proper sweet corn preparation is to avoid overcooking it. Overcooking sweet corn accelerates the starch conversion compromising both flavor and texture. Important: Count time in pot from the moment the corn goes in, not from the time the water returns to a boil.  Your corn will be sweeter and tenderer if you don't kill it!  The Corn Man even eats it raw, and so do the dogs. Sometimes right out of the field.  Craaaaaaaaaaaaack!  There goes Kody sampling the sweet corn again.  Is it ripe, Girl?

How to cook sweet corn

  • Bring a large pot of salted water to a boil.
  • Add husked ears of premium sweet corn.
  • Do not crowd pot.
  • Cook corn covered for 4-5 minutes.
  • Drain corn immediately, do not leave in hot water!
  • Serve immediately with butter and salt.

 How to freeze sweet corn

  • Boil a large pot of salted water
  • Blanch corn on the cob for 3 minutes, no more*
  • Immediately plunge ears into ice water bath and allow to cool completely
  • Remove kernels from cob
  • Double wrap in freezer bags or bag & freezer box

Sweet Corn Recipes

Roasted Corn Salsa

6     fresh cobs of sweet corn, husked
4     fully ripe tomatos
4     scallions - chopped
2     garlic cloves - peeled and minced
2T   olive oil + additional for grilling
juice of 1/2 lemon
tabasco or other hot pepper sauce to taste
freshly ground black pepper
Coat corn with a bit of olive oil , then cook on grill until nicely roasted (+/-15 min on high). Cut shallow cross on base of tomatoes and grill about 2 minutes until skin loosens.
Cut corn kernals off cob, peel and chop tomotoes. Combine with remaining ingredients and let rest at room temperature for 1-2 hours before serving.
Serve with tortilla chips, or with grilled chicken (marinated in lemon juice, olive oil, tabasco, crushed garlic, cumin, salt and pepper)  and tortillas warmed on the grill.  Serve with sour cream and garnish with cilantro, if desired.
